This is a simple but delicious meal and for all my peanut butter lovers, you can use what you have in the fridge or mix and match what veg you would like, could put in bean sprouts, baby corn, snap beans etc same with the toppings, you could also change the noodle type or fry veg and sauce and serve with plain rice. I think the Shiitake mushrooms work well with it but could use other mushrooms if you prefer. The hot sauce I used was En Roots Raja Bonnet sauce (you need this in your life) but if you don’t have (but you should) you can use any hot sauce you prefer like Sriracha.
